China produces the most white peaches in the world according to Wikipedia.org, and according to a Chinese legend, it's one of the only fruits that are grown in the heavens for deities.
As such, the Chinese love to use peaches or make buns into peach shapes to honour gods during festivals.
So Why Chinese White Peach?
Apart from the numerous legends and usage for festivals in Asia, the white peach has a really pleasant taste that appeals to people of all ages.
In fact, because many desserts and sweets use the white peach as a base, we know for sure that if we do a macaron with Chinese white peaches, will it truly be an Asian delight!
How We Make It…
Of course, it all begins with turning ripe white peaches into fruit puree.
We then turn the puree into a fragrant and tasty jam before we mix them into our italian meringue buttercream to make our macaron filling.
Then finally, we sandwich the cream between our light and delicate macaron shells for a delicious Chinese white peach macaron.
