Usually presented as salted caramel because of the use of table salt, we've decided to use sea salt instead to give a very pleasant saltiness, unlike the punch you get from table salt.
Heating sugar syrup to a gold caramel brown and then adding cream and white chocolate, a very precise ratio of sea salt is then added to the caramel mixture before allowing the entire mixture to cool overnight.
The result? Great tasting sea salt caramel filling, which are then used to make our great tasting sea salt caramel macarons. In fact, one is never enough.
